Prepare salsa: Combine papaya, onion, lime juice, cilantro, and jalapeño in a small bowl. Season with 1½ teaspoons sea salt and set aside.
In a dry skillet, heat tortillas on both sides until lightly browned in spots.
Top tortillas with salmon, cabbage, and avocado. Top with papaya salsa. Serve with your go-to hot sauce.
