Ingredients
For the salad:
(1 package) rice vermicelli noodles , cooked
ounces large pre-cooked shrimp, tails removed and cut in half lengthwise
romaine lettuce leaves, chopped
small carrots, julienned
Persian cucumber, julienned
mint leaves, roughly chopped
roughly chopped roasted and salted peanuts
For the Nuoc Cham sauce:
fish sauce
fresh lime juice
honey
garlic-chile paste
Directions
Step 1
Whisk all the sauce ingredients together with 1 teaspoon of water until the honey is dissolved. Set aside.
Step 2
In a bowl, combine the noodles with the shrimp, lettuce, carrot, cucumber, and mint. Top with peanuts and Nuoc Cham sauce as desired.
