Cumin-roasted beets

Eating this deeply-hued root veggie could help improve performance in the gym.

In addition to containing anti-inflammatory phytochemicals, beets are rich in nitrates, which dilate the blood vessels and allow more oxygen and nutrients to reach the muscles. Try this preparation, which also features antioxidant-rich cumin, from Philadelphia-based recipe developer Robert Luessen.

2 pounds beets, washed, stems and greens removed
2 tablespoons olive oil
1 tablespoon cumin



Preheat oven to 400 degrees. Rub beets with olive oil, and season with cumin, salt, and pepper.


Wrap each beat in aluminum foil and place on a baking sheet. Roast for 60 minutes or until fully cooked through (when a sharp knife pierces the beet easily). Set aside to cool completely.


Once cooled, peel the beets and dice into 1-inch chunks. Place in an airtight container and store into the fridge.
