Coconut-mango chia seed pudding

This easy recipe is packed with protein and healthy fats.

“While coconut is a saturated fat, it’s a very unique kind,” says Lisa Hayim, R.D., a registered nutritionist based in New York City. Most saturated fats are known as long-chain fatty acids, which need to be broken down by pancreatic enzymes and then get stored in our body as fat, she explains. “Coconut fat, however, is a medium-chain triglyceride (MCT) and instead gets transported through the bloodstream directly to the liver where it can be used for energy immediately.”

¾ cup full fat coconut milk
2 tablespoons chia seeds
½ cup frozen mango
1 teaspoon vanilla extract


1 scoop protein powder



Place all of the ingredients in a mason jar or a bowl. Stir well and store in the refrigerator with a lid on until ready to eat.
