Banana bread oat muffins

A fiber-packed way to start the morning

“For a healthier take on classic banana bread, this recipe calls for oats, which contain beta glucans,” says Lisa Hayim, R.D., a New York City-based nutritionist and founder of The Well Necessities. “Studies have shown that beta glucans play a role in heart health and promoting good digestion.” Hayim recommends including a couple tablespoons of raw cacao nibs in the batter, which are an excellent source of magnesium and antioxidants.

2 eggs
1 cup raw old-fashioned oats
2 large bananas
1 teaspoon cinnamon
½ teaspoon baking powder
1 teaspoon salt
2 tablespoons raw cacao nibs



Preheat oven to 350 degrees and places six liners in a muffin tin.


Crack the eggs into the blender and pulse until smooth.


Add remaining ingredients and blend until fully combined.


Evenly divide batter into cups and sprinkle in the cacao nibs if using. Bake for 15 to 20 minutes, or until a fork can pierce the center of the muffins cleanly.
