Garlic roasted fingerling potatoes

Make a big batch for a healthy carb to last all week.

Roasted potatoes are a well-balanced carb for athletes since they contain a good amount of fiber, vitamins, and minerals like potassium. “These crispy roasted potatoes can be served as a side for a meat or fish dish, or used in vegetarian bowls,” says Natalie Mortimer, who co-founded The Modern Proper with fellow chef Holly Erickson.


6 fingerling potatoes, cut in half
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon sea salt
¼ teaspoon black pepper
2 garlic cloves, minced


Preheat oven to 400 degrees.
Evenly space potatoes on a parchment-lined pan, skin side up. Drizzle with olive oil and sprinkle with garlic powder, sea salt, and pepper.
Roast for 20 minutes then remove and sprinkle potatoes with minced garlic. Turn over potato halves and increase heat to 500 degrees. Put the potatoes back in the oven and continue cooking until edges are crispy, about five to ten minutes. Remove pan from oven and allow to cool.
