Including whole-grain stuffing and glazed squash with pecans and sage
During Thanksgiving dinner, New York City–based recipe developer Laura Rege uses an approach called “crowding it out:” “I fill my plate with delicious vegetable sides,” she explains, “making less room for some of the traditional (and heavy) dishes which take a toll on your waistline and your gym progress.” These recipes celebrate seasonal produce with plenty of textural and flavorful additions like turmeric pickled onions on tahini-laced green beans, chopped walnuts and cranberries in whole-wheat stuffing, and crisp sage and pecans on roasted butternut squash.
