Cucumber cooler

This refreshing mocktail is made with chamomile tea.

This cooling drink is also comforting, thanks to chamomile tea and mimulus flower. Both ingredients are used to ease anxiety and calm nerves, says Laura Rege, a New York City-based recipe developer. It’s combined with hydrating cucumber and citrusy lime to create a refreshing mocktail.

1 chamomile tea bag
1/3 cup boiling water
1 English cucumber, roughly chopped
2 tablespoons lime juice
2 tablespoons agave
8 drops mimulus flower essence (such as Bach Flower Mimulus)
Seltzer water


In a 2-cup pitcher or measuring cup, pour boiling water over the tea bag. Let steep 7 minutes. Remove the bag, squeezing the excess liquid into the pitcher.
Add the tea, cucumber, lime juice, and agave to a blender; blend until smooth. Place a fine-mesh sieve over the pitcher or measuring cup. Strain and discard the solids.
Fill four glasses with ice. Add 2 drops of mimulus flower essence to each glass. Divide the cucumber mixture between the glasses, and top each with seltzer. Stir and serve.
