Lavender-cashew milk

This warm, soothing elixir is ideal before bed.

Studies show that lavender can help reduce anxiety, meaning it can help athletes can get a more restful night’s sleep and feel energized the morning. “Look for a light, mild honey (such as clover) that won’t overpower the flavor and aroma of the lavender,” says Denver-based recipe developer Julia Heffelfinger.

6 cups unsweetened cashew milk
4 teaspoons clover honey
1 teaspoon vanilla extract
¼ teaspoon ground cardamom
Pinch of salt
4 teaspoons dried edible lavender buds, plus more for garnish



In a medium saucepan, bring the cashew milk, honey, vanilla, cardamom, and salt to a simmer over moderate heat, whisking to dissolve the honey and salt.


Place the lavender in a disposable tea bag. Reduce the heat to low and add the lavender to the cashew milk mixture. Gently simmer, stirring occasionally, for 15 minutes. Squeeze any liquid out of the lavender sachet and discard. 



Blend the lavender milk with an immersion blender until frothy if desired. Pour into mugs and garnish with lavender buds.
